Recipe Wednesday

Another lovely recipe from the very clever Clean Geeg!

SALMON CEVICHE (serves 2)

~ 2 high quality salmon fillets, skinless and boneless

~ Juice of 3 lemons

~ 1 avocado, diced

~ 2 beef tomatoes, diced 

~ 1/2 red onion, finely chopped

~ Handful of coriander leaves, finely chopped

~ Olive oil 

~ 1 tbsp sesame seeds

~ 2 tortillas

1. Chop your salmon into 1cm cubes and place in a bowl.

2. Cover the salmon with lemon juice stirring together. The fish doesn’t need to be totally covered in the juice but if you push a tsp spoon against the mix it should fill with lemon juice.

3. Leave the salmon for 30 minutes till pale. 4. Whilst you wait prep your vegetables and place the tortillas into a hot oven. Once they are hard and golden brown remove form the oven and crack into chips - these are your dipping tostadas!   

5. Once the salmon has rested for half an hour add your avocado, tomato, red onion, sesame seeds and coriander and mix together.

6. Drizzle with olive oil and serve alongside the tostadas!
