Apple & Sage Sausage Rolls by Clean Geeg

(Makes enough for 4 people)

- 400g sausage meat or 6 sausages, meat squeezed out of skins

- 1 large red onion, finely sliced

- 1 Apple, cored and chopped into small chunks or grated

- 20g sage leaves

- 1 ready rolled puff pastry sheet

- 1 egg yolk

- Sesame seeds

- Butter

1. Firstly line a baking tray with greaseproof paper and preheat your oven to 200 degrees.

2. In a frying pan melt a knob of butter. Once bubbling add your sage leaves for a few minutes till crisp, around 30 seconds. Place onto a piece of kitchen towel to Blot out any excess butter and crumble in your fingers.

3. In a mixing bowl place your sausage meat, crumbled sage, red onion, apple and seasoning. Mix everything together - I find the easiest way is to use your hands!

4. Remove your pastry from the pack and cut down the middle lengthways. 

5. Halve the sausage mix and lay the meat down one side of each piece of pastry on the long side evenly.

6. Roll up the pastry tightly making sure the meat is fully covered in the pastry. Cut both rolls into four pieces and place crease side down on the baking tray. 

7. Brush each sausage roll with the egg yolk and sprinkle with sesame seeds. Place in the oven.

8. Cook for 45 minutes, till golden brown and the pastry has puffed. Once out the oven leave for a few minutes to let the whole thing harden so you don’t lose the bottoms on the way out.

9. Enjoy hot, warm or cold with your condiment of choice and a delicious avocado French salad!
