Earl Grey Tea Loaf from Clean Geeg

INGREDIENTS

~ 300ml strongly brewed Earl Grey tea

~ 250g sultanas

~ 250g wholemeal wheat or spelt flour

~ 100g dark brown soft sugar

~ 1 tsp cinnamon

~ 2 tsp baking powder

~ Pinch of salt

~ 2 eggs

METHOD 

1. The night before place your hot tea and sultanas in a heatproof mixing bowl. Stir it all together, cover with tin foil and leave to one side overnight to let the sultanas absorb the tea and soften.

2. The next day preheat your oven to 180 degrees and grease and line a loaf tin with greaseproof paper.

3. Add the sugar to the tea mix and stif together.

4. Place the flour, cinnamon, baking powder and salt in a mixing bowl.

5. Pour the sultana tea mix into the dry ingredient bowl and mix together. Add your eggs and mix till a smooth batter forms.

6. Pour into the loaf tin and place in the oven for 1 hour, till a skewer comes out clean when inserted in the middle.

7. Leave to cool in the tin for about an hour before removing me enjoying warm with lathers of butter. 

8. Store in a cool, dry place and highly recommend toasting and buttering for the next slice!
